Green bean, green mango and kohlrabi salad with mustard caper dressing and crispy shallots


This salad serves 4 as a salad on its own or 8 as a side salad as part of a larger meal. Kohlrabi is a much under utilised summer vegetable and adds a sympathetic crunch to the more familiar beans whilst the green mango adds a refreshing punch.

Green Bean, green mango and kohlrabi salad with mustard, caper dressing and crispy shallots

Servings 8 as a side salad.


  • 1 Sharp knife
  • 1 mandoline
  • 1 small bowl
  • 1 whisk
  • 1 small saucepan
  • 1 strainer
  • 1 small bowl of ice



  • 100 gms snake beans cut into 5cm lengths
  • 150 gms green beans cut into strips lengthways
  • 20 gms red eschalots finely sliced lengthways
  • 80 gms kohlrabi julienned
  • 80 gms green mango julienned
  • 100 gms baby cucumber sliced thinly on an angle
  • 10 gms mint leaves
  • 15 gms saw tooth coriander (regular coriander leaves will suffice) finely julienned
  • 20 gms crispy shallots these can be purchased from an Asian grocer


  • 15 gms white wine vinegar
  • 1.5 gms sea salt
  • 6 gms Dijon mustard
  • 35 gms extra virgin olive oil
  • 6 gms baby capers Baby capers in brine just need to be lightly rinsed whilst salted capers will need to be blanched in several changes of boiling water to remove excess salt.)



  • Blanch the beans in lightly salted boiling water for 1 minute each to soften.
  • Remove from boiling water to a bowl of iced water to cool for 1 minute then drain.
  • Combine all of the salad ingredients except for the crispy shallots with the vinaigrette and place in a serving bowl.
  • Sprinkle with the crispy fried shallots and serve.


  • In a small bowl whisk together the white wine vinegar, salt, dijon mustard to dissolve
  • Whisk in the extra virgin olive oil and the capers.
